Creamy Cheese Mashed Potatoes
Ingredients:
2 lbs. (about 6 medium) potatoes, peeled and cut into 1 inch chunks
3/4 cup evaporated milk
1/4 cup (1/2 stick) butter or margarine
1 cup (4 oz.) shredded cheddar cheese
salt and ground black pepper, to taste
Directions:
1. Place potatoes in a large saucepan
2. Cover with water
3. Bring to a boil
4. Cook over medium-high heat for 15-20 minutes, or until tender
5. Drain
6. Return potatoes to saucepan
7. Add evaporated milk and butter
8. Beat with mixer until smooth
9. Stir in cheese
10. Season with salt and pepper, to taste
11. ***Chopped green onions, chopped parsley or cooked, crumbled bacon may be added o mashed potatoes.
