Creamy Blue Cheese Potatoes

If you love blue cheese, you'll love this recipe! Made easy with micro cooking the potatoes first and then conventional baking
Ingredients:
2 large or 4 medium russet potatoes
4 oz butter
3 cloves minced garlic
4 oz blue cheese
salt and pepper
4 oz heavy cream
Directions:
1. Do not peel potatoes.
2. Pierce with fork and place in Microwave.
3. Cook on high until soft to touch.
4. Approx 6 minutes for large and 4 minutes for Medium potatoes.
5. Let cool to touch.
6. In buttered casserole, layer sliced potatoes with rest of ingredients.
7. Pour cream over top.
8. Bake in 350 degree oven 30-45 minutes.
