Embarrassingly good and decadent. Surprisingly easy! I like to make this for holidays. It is reminiscent of Boston Market's Creamed Spinach. This is a good comfort food, as it is kind of bland. You can spice it up with cayenne or whatever, but I like the simple tastes of the spinach and the creamy sauce. This is GREAT to make ahead, and is actually better once it has had a chance to sit and let the flavors blend.
Ingredients:
4 tablespoons butter
4 tablespoons flour
1/4 teaspoon salt
1 cup whole milk or 1 cup cream
4 tablespoons butter
2 tablespoons finely chopped onions
16 ounces frozen chopped spinach
white sauce
1/2 cup sour cream
salt
pepper
sliced tomato (optional)
sliced provolone cheese (optional)
Directions:
1. To prepare white sauce:
2. Melt butter, add flour and salt.
3. Whisk continuously for about 5 minutes or until you have a nice roux.
4. Slowly add milk or cream, stirring until thick.
5. To prepare creamed spinach:
6. Melt butter in a pan, add onion.
7. Saute for 2 minutes.
8. Add spinach (frozen or thawed) and cook until spinach is thawed and warm.
9. Add white sauce and sour cream. Season to taste with salt and pepper.
10. At this point, you can get really fancy and top with sliced provolone and tomatoes and stick under the broiler for a few minutes.
11. Note: I have used whole wheat flour to make the white sauce with no bad effects.
