Creamed Sauted Mushrooms

Quick and simple side dish that goes well with chicken, beef or as a accompniment of an omelette.
Ingredients:
1lb button mushrooms
2 shallots
2 cloves of garlic
a nob of butter
125g double cream
salt and pepper
Directions:
1. Wash thoroughly the mushrooms (three times until the water is clear).
2. Finelly chopped the shallots and garlic.
3. Slice down the mushrooms as fine as possible.
4. Heat up a frying pan, add the butter, sweat off the shallots for 1 minute or so.
5. Add in the mushrooms and stir-fry them for 10 minutes.
6. Add the garlic and the cream.
7. Allow to reduce until creamy consistency.
8. Season.
