I made cookwithfeeling’s Homemade Breakfast Sausage on Sunday. Delicious. I must admit that I cut the apple content a bit and added a tsp of chile powder & one of Italian seasoning but that’s just my dago blood talkin. Read more . The apple bit was a real treat. So I made that and munched a patty. However, I had this incredible craving for one of my favorite breakfasts, Creamed Eggs on Toast. I can still see my grandpa Jimmy and my dad slicin & dicin, mixin and talking old times while they put Sunday breakfast together. That, my friends, was more years ago than most of you have. This should feed two. The Homemade Breakfast Sausage is in the freezer to be savored during the week, when I don’t have time to make it from scratch.
Ingredients:
• 4 or 5 hard boiled eggs, depends on size & how much you like eggs.
• 3 cups of thin white sauce. i added about 1/2 cup of gouda cheese to the basic white sauce for this one but sometimes yes & sometimes not. basic white sauce
• 2 - 3 strips of bacon cut crosswise into thin strips.
• 1 to 2 tbs grated onion.
• 4 slices of your favourite bread, toasted. in this case i used homemade, very chewy italian country bread. i have done this with english muffins & that is very nice.
• a pinch of sweet basel.
• salt & fg pepper to taste.
Directions:
1. 1. Boil the eggs and allow to cool a bit.
2. 2. Make the white sauce, with the Basel & add the cheese if you like. See Photo
3. 3. Fry the bacon & onions until just done.
4. 4. Toast the bread.
5. 5. Peel the eggs and slice. I use mandolin for this.
6. 6. Put the bacon, onions & eggs in the white sauce & bring to a simmer, stirring constantly.
7. 7. Slice the toast into strips and spoon the creamed eggs over the top.
8. 8. Garnish with a bit of cilantro or parsley.
