From joyofbaking comes these lovely cream scones which are to be served with.. you guessed it! Devon cream or whipped cream. Scones freeze very well but I can't imagine having to do that.
Ingredients:
2 cups (280 grams) all purpose flour
1/4 cup (50 grams) white sugar
2 teaspoons (10 grams) baking powder
1/4 teaspoon salt
1/3 cup (76 grams) cold unsalted butter, cubed
1 large egg, lightly beaten
1 teaspoon vanilla extract
1/2 cup (120 ml) whipping cream or milk
Directions:
1. Preheat oven to 375 degrees F/190 degrees C..
2. Place rack in middle of oven.
3. Line a cookie sheet with parchment paper.
4. In a large bowl OR bowl of a food processor whisk together the flour, sugar,baking powder and salt.
5. Add cold butter and cut into flour with a pastry blender OR food processor until mixture resembles coarse crumbs.
6. In a small measuring cup combine the cream, beaten eggs and vanilla.
7. Add this mixture to the flour mixture.
8. Stir until just combined. Do not overmix.
9. Knead dough gently on a lightly floured surface.
10. Pat dough into a 7 circle.
11. Using a 2 1/2 (6.5 cm) cookie cutter, cut dough into rounds.
12. Place the rounds on the prepared cookie sheet, a few inches apart.
13. Brush tops of scones with a little cream to aid in browning.
14. Bake for 15 to 18 minutes OR until golden and a toothpick inserted comes out clean.
15. Remove from oven and transfer to a wire rack to cool.
16. Serve with Devon cream OR softly whipped cream and your favorite jam.
