Cream Pie (Coconut or Banana)

Ingredients:
1 (8 inch) pie crusts, cooked
1/2 cup sugar
1 pinch salt
3 tablespoons cornstarch
2 cups milk
1/4 cup corn syrup
3 egg yolks, beaten
2 tablespoons butter
1 teaspoon vanilla
1/2 cup coconut or 3/4 cup banana, sliced
3 egg whites
1/2 cup sugar
Directions:
1. Preheat oven to 350 degrees.
2. Mix together sugar, salt and cornstarch. Add milk and corn syrup, cooking on medium heat until thick.
3. Temper the egg yolks by stirring in a little of the milk mixture at a time into the beaten egg yolks. Add egg yolk mixture back to milk mixture and cook 3 minutes, stirring constantly.
4. Remove from heat and add butter and vanilla, coconut or banana.
5. MERINGUE.
6. Beat egg whites until stiff. Add sugar slowly, continuing to beat.
7. When stiff, put on pie and bake pie for 12 - 15 minutes.
