Cream Of Turkey And Wild Rice Soup

A healthier twist on a creamy turkey and wild rice soup
Ingredients:
1tbs extra virgin olive oil
2c sliced mushrooms(about 4oz)
3/4c chopped celery
3/4c chopped carrots
1/4c chopped shallots
1/4c all purpose flour
1/4tsp salt
1/4tsp fresh ground pepper
4c chicken broth(reduced-sodium)
1c quick cooking or instant wild rice
3c shreaded cooked turkey or chicken(12 oz)
1/2c reduced-fat sour cream
2tbs chopped fresh parsley
Directions:
1. Heat oil in a large saucepan over medium heat. Add mushrooms,celery,carrots and shallots and cook,stirring,until softened,about 5 mins. Add flour,salt and pepper and cook,stirring for 2 mins more.
2. Add broth and bring to a boil,scraping up any browned bits. Add rice and reduce heat to a simmer. cover and cook until the rice is tender,5 to 7 mins. stir in turkey(or chicken),sour cream and parsley and cook until heated through,about 2 mins more.
