Cream of Tuna

A quick nutritous meal when you don't really feel like cooking. Nothing fancy, just quick and easy to make. If you don't want to make a roux you can substitute it for a cream of mushroom soup (or whichever you prefer). This can also be served over noodles or toast if you prefer.
Ingredients:
4 tablespoons margarine
4 tablespoons flour
1/2 teaspoon salt
1/8 teaspoon pepper
2 cups milk
1 (15 ounce) can mixed vegetables
1 (12 ounce) can tuna
4 cups uncooked rice
Directions:
1. Boil 4 cups of water, add rice, and set aside.
2. Drain tuna and vegetables and set aside.
3. In medium sauce pan, melt margerine over medium heat.
4. Once melted add flour, salt, and pepper. Stir together until a paste is formed.
5. With a wire whisk, add milk. Stir regularly until sauce is thickened.
6. When sauce is at desired consistency, add vegetables and tuna.
7. Serve sauce over rice and enjoy.
