I made this soup by accident. I was making celery mashed potatoes (something I had recently at a restaurant) and added too much milk!
Ingredients:
russet potatoes, 4 peeled and chopped
celery, however much you have left-over, chopped
salt
black pepper
garlic powder
evaporated milk, 1 can
sour cream, 1 small container
parmesan cheese, 1 handful
Directions:
1. Chop potatoes and celery & place in a pot. Cover with cold water & bring to a boil.
2. Boil until potatoes slip off the knife.
3. Drain water & mash.
4. Add remaining ingredients and stir.
5. Soup will be thick.
