Cream of Mushroom Soup, Shaw's

Ingredients:
10 lbs mushrooms, sliced
2 lbs celery, sliced
2 lbs onions, chopped
1 lb butter
4 tablespoons garlic, minced
4 tablespoons hot sauce
3 cups white wine
1 1/2 cups chicken base
1/2 cup thyme
4 bay leaves
1 gallon water
1 gallon cream
2 cups cornstarch
Directions:
1. Saute mushrooms with butter; add celery, onion, wine; simmer 15 minutes. Add chicken stock & water. Add cream. Bring to low boil. Add cornstarch dissolved in water to thicken.
