Creamy,easy and delicious mushroom soup. Family Circle
Ingredients:
1 tbs butter
2 cloves garlic,chopped
1 c onion,chopped
1/2 c celery,chopped
8 c mushrooms,trimmed and quartered
1/4 c flour
1/4 c sherry
6 c vegetable broth
3/4 c heavy cream
1 tsp. salt
1/4 tsp pepper
chives,1/4 tsp nutmeg for garnish
Directions:
1. Melt butter in large non-stick saucepan;add garlic,onion and celery. Cook over med-high heat 5 to 7 mins. Stir in mushrooms and cook 6 to 8 mins. Sprinkle with flour and stir;cook 1 min.
2. Add sherry and vegetable broth. Bring to boil,then reduce to simmer. Cook 25 mins.
3. Cool slightly and puree in batches with hand held food processor or blender. Return to pot,simmer gently. Add heavy cream;heat through. Season with salt and black pepper. Garnishwith chives and nutmeg , if desired. Family Circle
