Soooo delicious - We just love those delicious fiddleheads when they come fresh in the spring, this is just one of the many recipes I have for fiddleheads!!
Ingredients:
1/4 cup green onion, choped
1/4 cup butter
3 cups chicken broth
1 1/2 cups cubed potatoes
4 cups fiddleheads
1/2 teaspoon salt
1/4 teaspoon white pepper
1 3/4 cups whole milk
Directions:
1. Saute onions in butter 5 minutes. Stir in broth, potatoes, fiddleheads and seasoning.
2. Cover and simmer until potatoes are cooked.
3. Purée in blender.
4. Stir in milk. Serve hot.
