This is a classic stuffed mushroom recipe. Even my friends who don't like mushrooms enjoy this! Use more or less of the ingredients to your taste preferences.
Ingredients:
1 package of fresh mushrooms
1 stalk of green onion
1 cup breadcrumbs
3 or 4 large dollops of 1/3 less fat cream cheese
1 tablespoon minced garlic
1/2 cup parmesan cheese
margarine
milk
Directions:
1. Preheat oven to 375 F.
2. Clean mushrooms and remove stems. Finely chop the stems, leaving the tough end to be discarded.
3. Finely chop the onion and combine it with the chopped mushroom stems.
4. Add the margarine to a pan and saute the stems and onion on medium-low heat.
5. Add the cream cheese, breadcrumbs, and garlic. Continue to saute until the mixture is cohesive.
6. Remove from the stove and spoon the mixture into the mushroom caps, letting the mixture overflow a bit.
7. Lightly dust the mushroom caps with grated parmesan cheese.
8. Place the mushrooms in a pie pan or on a baking sheet with milk just covering the bottom to prevent the mushrooms from burning.
9. Bake in oven for about 20 minutes.
