I halved some of the cherries and paired them with a pecan. You could also mix dates with pecans or cherries. This is not a super-sweet cookie, which makes it a nice addition to a plate of richer cookies. If you have a ravioli wheel to cut the strips; it gave the cookies a decorative edge. Read more . Dates add a natural sweetness that the pastry doesn't have and I like it that way. Cookie is very tender.
Ingredients:
1 cup (2 sticks) softened butter
8 ounces cream cheese
2 cups sifted flour
1/4 teaspoon salt
powdered sugar
pitted dates, candied cherries and pecan halves
Directions:
1. Cream together butter and cream cheese.
2. Blend in flour and salt.
3. Chill for several hours or until dough is firm enough to roll.
4. Preheat oven to 375 degrees.
5. Roll dough to 1/8-inch thickness, using dusting of flour to prevent dough from sticking to surface and rolling pin. Sprinkle with powdered sugar.
6. Cut into 1- by 3-inch strips with pastry wheel.
7. Put a date, cherry or pecan half in center of each strip and roll up. Put the folded side down on ungreased cookie sheet.
8. Bake for 15 minutes, until lightly brown. Cool slightly, then sprinkle with powdered sugar.
9. Makes 5 to 6 dozen.
