Cream Cheese Rhubarb Muffins

Fantastic Muffin . Sweet Tart just plain delightful
Ingredients:
11/2 cups brown sugar
1/2 cup oil
1 egg
2 tsp vanilla
1 cup buttermilk
1 1/2 cups diced rhubarb
2 1/2 cup flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
topping
1 tbsp butter
1/2 tsp sugar
1 tsp cinnamon
filling
1 8 oz pkg cream cheese
3 tbsp sugar
Directions:
1. preheat oven 400*
2. prepare topping set aside
3. Prepare filling set aside
4. Combine dry ingredients and toss in diced fruit make a well in center
5. In smaller bowl beat together egg , vanilla, milk, and oil
6. Pour into well stir until just moistened 10 - 15 strokes
7. Pour half of batter into lined muffin cups
8. divide among cups cream cheese filling on top of batter
9. top with rest of batter
10. Sprinkle with topping
11. Bake 20 minutes
