Moist and chock full of colorful berries,these marvelous muffins are a seasonal specialty. Light,tasty and freeze well. Holiday!
Ingredients:
1 c butter,softened
1 pkg. (8oz) cream cheese,softened
1-1/2 c sugar
1-1/2 tsp vanilla
4 eggs
2 c flour
1-1/2 tsp baking powder
1/2 tsp salt
2 c fresh or frozen cranberries
1/2 c chopped pecans
Directions:
1. In large bowl,cream butter,cream cheese,sugar and vanilla. Add eggs,one at a time,beating well after each addition. Combine flour,baking powder and salt;stir into creamed mixture just until moistened. fold in cranberries and pecans.
2. Fill 24 greased or paper-lined muffin cups three-fourths full.
3. Bake at 350 for 20-25 mins or till toothpick comes out clean. Cool 5 mins before removing to wire racks.
