Cream Cheese And Rhubarb Pie

Rhubarb pie with interesting cream cheese topping.
Ingredients:
1 unbaked pie crust for 9” plate
3 cups rhubarb, chopped into small pieces
1 cup sugar
1/4 teaspoon cinnamon
4 tablespoon cornstarch
1/2 teaspoon salt
1 -8 oz. pkg. cream cheese
1/2 cup sugar
1 large egg
Directions:
1. Cook rhubarb, sugar, spice, cornstarch and salt until thick.
2. Pour into 9” unbaked pie shell.
3. Bake 425ºF 10 minutes.
4. Mix cream cheese, sugar and eggs until creamy.
5. Pour on top of rhubarb.
6. Bake on cookie sheet, in case of dripping.
7. Bake at 350ºF for 30 minutes.
8. Filling will puff as it bakes.
9. Pie will be over-baked if the top turns brown.
10. Allow to cool before serving.
