this is a very simple cake made without butter!
Ingredients:
1 egg
3/4 cup heavy cream
1 cup sugar
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon nutmeg
1 teaspoon vanilla
Directions:
1. Preheat oven to 350 degrees. Place egg in a liquid measuring cup and add heavy cream to fill cup to the 1-cup line. Place in a medium mixing bowl and stir together.
2. Beat in sugar. Soft together flour, baking powder, salt and nutmeg. Add to mixture. Stir in vanilla. Place in a greased 8-inch round cake pan. Bake 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.
3. This is a great cake served with fresh peaches and cream!
