BUTTERY EARTHY SAVORY
Ingredients:
3/4 cups orzo ( if you can find it rosa marina greek pasta)
3/4 cups rice
3 cups chicken broth
1/2 cup butter
1/2 cup pine nuts
6 cloves garlic
6 green onions
1 cup fresh mushrooms ( i like portabello mixed with button mushrooms)
1 tbsp. parsley
1 tsp. oregano
black pepper (to taste)
Directions:
1. DICE ONION, CRUSH GARLIC, SLICE MUSHROOMS
2. MELT BUTTER IN SAUTE PAN OVER MEDIUM HEAT
3. ADD ONION AND COOK UNTIL SOFT, STIR MUSHROOMS AND COOK UNTIL BROWNED
4. STIR IN RICE AND ORZO COOK UNTIL BROWN AND CHALKY
5. STIR IN WARM STOCK , COVER AND BRING TO A BOIL,
6. REDUCE HEAT TO LOW AND COOK UNTIL RICE IS COOKED AND VERY TENDER AND ALL THE LIQUID IS ABSORBED ABOUT 40 OR 50 MINUTES
7. ADD SPICES AND PINENUTS STIR WELL.
8. LET STAND FOR 10 MINUTE TO ALLOW FLAVORS TO DEVELOP.

10. ( YOU CAN LEAVE OUT THE GREEN ONION AND USE SHALLOTS INSTEAD, AND INSTEAD OF CHICKEN STOCK YOU CAN USE BEEF STOCK
