Crazy Cajun Fried Rice

Ingredients:
2 quarts cold cooked rice
1 cup salad oil
1 lb cabbage, chunked
1/2 cup shredded carrot
1 cup diced onion
1/2 cup diced celery
1/2 cup diced bell pepper
1 red bell pepper, diced
1/2 cup chopped scallion (tops)
1/2 cup chopped scallion (white part)
1 tablespoon minced garlic
10 ounces ham, cubed
10 ounces chicken, cubed
8 ounces andouille cajun sausage, cubed
1/2 cup soy sauce
1 cup peas
1 tablespoon cajun seasoning
1 teaspoon black pepper
2 teaspoons salt
Directions:
1. In a large pot of hot oil, lightly cook all the meats and vegetables (except peas) over high heat, stirring often.
2. Add seasoning and peas. Simmer 4-5 minutes. Saute cold rice with a little salad oil. Add fried rice garnish. Fry and stir well.
