Cranberry Walnut Salad With Leafy Greens

Simple, Delicious. Great all year round! On the side or on it's own. The Crunch of Walnuts, Sweet Cranberries, and Grated Pecorino Ramano Cheese makes this one a hit!
Ingredients:
1 head leaves lettuce (i.e., romaine, green or red leaf)
1/2 cup chopped walnuts
1/2 cup dried sweetened cranberries
1/2 cup grated pecorino romano cheese
olive oil
Directions:
1. Wash, dry and break up lettuce. I use a mix of lettuces for color and texture. In a large mixing bowl, toss lettuce with cheese, cranberries and walnuts. Add olive oil enough to coat, and toss well,

3. Crusty Seasoned Croutons or Yesterday's leftover Crostini.
4. 1 C Black Olives.
5. 1/2 C olden Raisins.
6. I don't often add tomatoes, as I think they tend to get lost in this salad. But feel free to add them if you need to.
7. I have made this in the Summer as a light meal, and I've made it along side of Thanksgiving Dinner. It's quite versitale, and everyone loves it!
