A tart and flavorful low calorie dressing for roasted winter vegetables, warm or cold. Serving size is about two tablespoons.
Ingredients:
1/2 cup cranberry sauce
1/4 cup orange juice
1 teaspoon fresh ginger, grated fine
1 tablespoon olive oil
2 tablespoons balsamic vinegar
1/4 teaspoon salt
Directions:
1. Mix all ingredients into a jar with a good lid (one that won't leak) and shake well to blend. Let sit overnight in the fridge for the flavors to blend.
