Cranberry Sweet Potato Bake

Ingredients:

  • 1 medium sweet potato , steamed until tender
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 pinch salt
  • 2 tbsp orange juice (i actually used the juice from 1 clementine and it worked very nicely)

Directions:

  1. Preheat oven to 350°F Line a baking dish with foil.
  2. Combine all ingredients except sweet potato and let stand 5 minutes to let flavours mix.
  3. Meanwhile, cut sweet potato into 1/2 inch pieces. Toss with cranberry mixture.
  4. Cover with foil and bake for 20-25 minutes.
