Cranberry Surprise Salad

Ingredients:

  • 1/2 cup sugar
  • 1 envelope gelatin
  • 2 tbsp sugar
  • 1/4 tsp salt
  • 1/2 cup mayonnaise
  • 2 tbsp lemon juice

Directions:

  1. Mix first 2 ingredients together and let stand.
  2. Mix gelatin, sugar and salt.
  3. Add hot water and stir to dissolve.
  4. Add remaining ingredients.
  5. Blend well with rotary beater.
  6. Pour into refrigerator tray and chill in freezer for 15 minutes.
  7. Beat until fluffy then fold in cranberry mixture, 1 can pineapple tidbits and 1/4 cup chopped nuts.
