This is a recipe my friend at work gave me several years ago. These are sooooo good and very pretty! :)
Ingredients:
1 1/2 c. sugar
2 large eggs
3/4 c. (1 1/2 sticks) unsalted butter, melted, cooled slightly
1 tsp. almond extract
1 1/2 c. ap flour
2 c. fresh or frozen cranberries (about 8 oz.)
1/2 c. chopped pecans or almonds (about 2 1/4 oz.) (optional)
coarse sugar to sprinkle on top before baking
Directions:
1. Preheat oven to 350 degrees F.
2. Butter a 9-inch square baking pan.
3. Using an electric mixer, beat sugar and eggs in large bowl until slightly thickened, about 2 minutes.
4. Bean in melted butter and almond extract.
5. Add flour and stir until well blended.
6. Stir in cranberries and pecans or almonds.
7. Pour batter into prepared pan.
8. Bake until tester inserted into center comes out clean, about 1 hour.
9. Transfer to rack and cool completely.
10. Cut into squares and serve.
