This recipe comes from the food section of the December 17, 2008 Houston Chronicle. These are a tasty and moist bar, perfect for any time of year!
Ingredients:
2 (16 ounce) cans whole berry cranberry sauce
2 tablespoons frozen orange juice concentrate
1/2 teaspoon ground cinnamon
1 1/4 teaspoons ground nutmeg
1/2 cup butter (1 stick)
1 cup brown sugar, packed
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 1/2 cups rolled oats
3/4 cup walnuts or 3/4 cup pecans, chopped
Directions:
1. In a large bowl, stir together the cranberry sauce, orange-juice concentrate. cinnamon and nutmeg;set aside.
2. In a mixing bowl, cream butter and sugar until light and fluffy; add vanilla.
3. Add flour, baking powder and salt.
4. Mix until well combined, then add oats (mixture will be very thick).
5. Preheat the oven to 350 degrees.
6. Pat half the dough into the bottom of a 9-by-13-inch baking dish.
7. Spoon the cranberry mixture evenly over the dough.
8. Crumble the remaining half of the dough over the cranberry mixture, to cover; sprinkle nuts on top.
9. Bake for 30 minutes.
