Traditional mainstream american holiday recipe that I discovered on . Very yummy and only 182 calories each. The cranberries taste sour and with the sugar it makes for a delicious contrast.
Ingredients:
3/4 cup yogurt, plain or vanilla
1 egg
2 3/4 cups flour
4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup margarine
1 cup cranberries
1/2 cup sugar
1 teaspoon orange rind, if desired
1 tablespoon margarine, melted
1/4 cup powdered sugar
Directions:
1. Beat yogurt and egg in small bowl and set aside.
2. Mix flour, baking powder, baking soda, and salt.
3. Cut in margarine with fork. Mix in cranberries, regular sugar, and orange rind.
4. Add yogurt mixture and stir
5. Use hands to form into large ball and knead on floured surface 10 times
6. Separate into 2 balls and pat into two 6 inch circles about 1 inch thick. Cut each circle into 8 sections for a total of 16 scones.
7. Transfer to ungreased cookie sheet and bake at 375 F for 15 to 20 minutes
8. While warm brush scones with melted margarine and SIFT or sprinkle powdered sugar over the tops. Best to use a sifter but you can also sprinkle by hand.
