This festive dish is a sweet and spicy spin off of your everyday salsa. We eat it with tortilla chips, but I would imagine it's wonderful as a condiment with Turkey and all the trimmings!
Ingredients:
1 bag (12 oz) fresh or frozen cranberries
1 granny smith apple, peeled, cored and cut into eighths
1/2 large green pepper cut into large chunks
1/2 medium red onion, cut into large chunks
3/4 cup sugar
1/3 cup apple juice
3 t chopped fresh cilantro (or more if you are a cilantro lover like me)
2 t chopped fresh jalapeno pepper
1 tsp grated lime zest
Directions:
1. Put cranberries, apple, green pepper and onion in food processor
2. Pulse until chopped
3. Transfer to large bowl
4. Stir in remaining ingredients until blended
5. Cover and refrigerate
