Low calorie muffins that are great for breakfast or a snack! Fall inspired, but delicious any time of the year, these muffins are full of fiber and iron.
Ingredients:
3/4 cup brown sugar
1/4 cup apple sauce
1/2 cup egg whites
1 tablespoon imitation vanilla extract
1 cup canned pumpkin
2 cups fiber one cereal
1/2 cup oatmeal
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/2 cup dried cranberries
Directions:
1. Preheat oven to 400 degrees. Grease muffin pan or use paper liners.
2. Mix sugar, apple sauce, egg whites, and vanilla. Add pumpkin.
3. In separate bowl, mix together oatmeal, baking soda, baking powder, spices, and salt. In a blender or food processor, blend Fiber One cereal and add to dry mix.
4. Add dry mix to wet and stir in cranberries.
5. Fill each muffin cup with 1/4 mix. Bake in oven for 25 - 30 minutes.
