Cranberry Pork Roast in the Crock Pot

This dish is perfect for company or a holiday meal. Plus, its so simple to throw together the night before and turn on in the morning before you leave for work. The pork flakes apart and the sauce is sweet and tart all at the same time. Serve with a green vegetable and/or a salad and you have a gourmet meal with out spending hours over the stove.
Ingredients:
4 medium potatoes, peeled and cut into 1-inch chunks
1 (3 lb) boneless center cut pork loin roast, rolled and tied
1 (16 ounce) can whole berry cranberry sauce
1 (5 1/2 ounce) can apricot nectar
1 small onion, chopped
1/2 cup coarsely chopped dried apricot
1/2 cup sugar
1 teaspoon dry mustard
1/4 teaspoon crushed red pepper flakes (optional)
Directions:
1. 1. Place the potatoes in a 3-1/2-quart (or larger) slow cooker and place the roast over the potatoes.
2. 2. In a large bowl, combine the remaining ingredients; mix well and pour over the roast.
3. 3. Cover and cook on the high setting for 5 to 6 hours.
4. 4. Remove the roast to a cutting board and thinly slice. Serve with potatoes and sauce.
