Cranberry Orange Yeast Bread

This bread tastes wonderful toasted with a little butter for breakfast. The cranberries have a delightful orange essence and give the bread a wonderful flavor. I created this recipe because I love cranberries and oranges. Read more . I saw a loaf of this bread in the store and it smelled wonderful, but it was $4/loaf and there wasNO way I was going to pay $4 for a loaf of bread.
Ingredients:
1 pkg. dried cranberries, chopped
2-3 t orange extract
2 c milk, scalded
1/4 c warm water (about 95 degrees)
2 t yeast (or 2 pkgs)
2 t sugar
2 t salt
1/2 c cinnamon sugar
2-3 c white flour
2 c whole wheat flour
additional cinnamon sugar
Directions:
1. After chopping cranberries, put in a bowl and pour orange extract over them. Stir and let sit awhile. Scald milk and allow to cool. Measure warm water and add yeast, sugar and salt. Stir and let rest 5-10 minutes. In a large mixing bowl, mix together cooled milk, yeast mixture, cranberries, 1/2 c cinnamon sugar, and 2 cups each of white flour and whole wheat flour. Add additional flour as needed until dough moves away from the sides of the bowl. Remove dough from the bowl. Knead a few minutes and place in a greased bowl to rise in a warm area. Allow to rise about one hour-one hour and a half. Punch down dough and divide into. Roll each piece into a long strip. Sprinkle each strip with additional cinnamon sugar. Roll up loaf and place in greased loaf pan. Cover loaves and allow to rise about an hour. Bake at 350 degrees for 35 minutes.
