We love cranberries. This is a delicious high protein muffin that freezes well. We are taking them with us on a trip, but they are great for that mid-morning or afternoon snack.
Ingredients:
1 cup oatmeal
1 cup flour
1/4 cup quinoa, ground
2 tablespoons wheat germ
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup sour milk or 1 cup buttermilk
1/3 cup oil
1 egg, beaten
1/4 cup sugar
1/4 cup splenda granular
1/2 cup cranberry sauce
1/2 cup dried cranberries
1/2 cup pecans
Directions:
1. Mix all ingredients and fill greased muffin tins.
2. Bake 17 to 18 minutes at 400 degrees.
