Our kids love these filling scones even though high fibre.Almost everyone lives on way to little fibre.
Ingredients:
topping;1/3c brown sugar
2t butter
1/4c chopped pecans
batter;3/4c wh. wh. flour
3/4c white flour
1c oats
1/4 c brown sugar
1/2t salt
1 1/2t orange peel
1/2c melted butter (i use 2/3 of this olive oil,no flavour diff.)
2/3c milk
1 egg
1t cinnamon
2/3c craisins
1 apple small cube
(easily change fruit,dry fruit,nuts to suit your taste,psylium fibre added to any flour baking at 5%/weight will make your baking lighter and fluffier)
Directions:
1. preheat oven,350 F
2. combine topping,set aside
3. combine dry ingredients,mix thoroughly
4. combine wet,mix
5. mix wet and dry,stir just until mixed
6. fold in fruit
7. spread batter into 9 in circle,carefully spread on topping,cut into 8 wedges.bake for 25 min or golden brown
8. remove from oven,recut wedges,serve warm
9. (it takes very little to develope this with your favorites)
10. enjoy
