Cranberry Bread

This is a wonderful holiday bread with the added goodness of whole wheat.
Ingredients:
2 oranges
2 cups whole wheat flour
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
2 cups sugar (i use a combination of splenda and sugar)
3 egg whites
1/4 cup oil
1/2 cup chopped walnuts
2 cups cranberries, coarsly chopped
Directions:
1. Preheat oven to 325 degrees.
2. Lightly oil two 9-by-5 inch loaf pans and set aside.
3. Grate the rind off the oranges and reserve.
4. Cut the oranges in half and squeeze out the juice.
5. Add enough boiling water to juice to make 1-1/2 cups liquid.
6. Combine the juice and rind with the remainig ingredients.
7. Place in prepared pans and bake for 1 hour or until wooden pick inserted in center comes out clean.
8. Allow to cool 5 minutes in pan, turn out and cool thoroughly before slicing.
