This is a healthy dessert, a great source of fibre, and low in sodium. It's sweet adn tart all at the same time. You can double this recipe and put it in a 9x13 pan - just great for a crowd!!
Ingredients:
3 cups cranberries (fresh or frozen)
3 cups apples, coarsely chopped
1/2 cup sugar
1 teaspoon cinnamon
1 tablespoon lemon juice
4 tablespoons all-purpose flour
3 tablespoons brown sugar
3/4 cup rolled oats
3 tablespoons margarine, melted
Directions:
1. Preheat oven to 375°F In a large bowl, combine cranberries, apples, granulated sugar, cinnamon, lemon juice, and 1 tablespoons flour.
2. Grease a 9-inch baking dish.
3. Spoon fruit mixture into a baking dish.
4. In a medium bowl, combine brown sugar, remaining flour, and rolled oats. Stir in margarine and toss to combine.
5. Sprinkle topping over fruit mixture.
6. Bake 40 minutes or until topping is lightly browned and apples are tender.
7. TIP: Serve with Vanilla Ice Cream.
