Quinoa with dried cranberries and edamame. Good as a side dish or as a light dinner.
Ingredients:
1/2 cup quinoa
1 cup water
1/3 cup dried cranberries
1/2 cup edamame
2 tbsp lemon juice
Directions:
1. Simmer quinoa in water until water has been absorbed (about 15 minutes).
2. Cook edamame in boiling water until it is al dente.
3. Put all ingredients in a bowl and mix.
