Cracked Canoe Battered Cod Fritters

Ingredients:

  • 1/2 lb cod , filets cut into small strips
  • 1 tbsp olive oil
  • 1/4 cup cornstarch
  • 1/2 cup cracked canoe lager beer

Directions:

  1. Toss the cod strips with the olive oil and a sprinkle of kosher salt. Chill and reserve.
  2. In a pot, place enough oil to fry the fritters, heat to 325F using a deep frying thermometer.
  3. In a medium bowl, add the 1/4 cup flour, cornstarch, Cracked Canoe lager, 1 teaspoons kosher salt, and mix with your hands until a smooth batter is formed. Adjust the consistency with some more beer if needed.
  4. Toss the cod strips in the 3 tablespoons of flour, then dredge each piece in the batter and fry until golden brown.
  5. Place on a paper towel, then serve with your favorite tartar sauce and slices of lemon or malt vinegar.
