Crab Soup

we love crab, so I created this soup as a wintertime pick me up!
Ingredients:
4 t butter or margarine
4 t flour
1 cup onion, finely chopped
1 cup celery, finely chopped
1/2 cup carrot, finely chopped/grated
salt and pepper to taste
1 quart skim milk, you can use any type your family likes
2 pounds crab meat, i use the imitation kind
1 t chopped parsley
3 hardboiled egges, chopped
Directions:
1. In the microwave, cook veggies 2-3 minutes on high, or until cooked.
2. In the top of a double boiler, melt butter and flour together.
3. cook for 3-4 minutes to create a blond roux.
4. stir in veggies, season with salt and pepper.
5. cook for 2 minutes.
6. whisk in the milk.
7. Bring the liquid up to a boil and reduce to a simmer.
8. simmer for 15 minutes.
9. stir in the crab meat, continue simmering for 15 minutes.
10. sprinkle chopped eggs in the bottom of soup bowl. Ladle soup into bowl. garnish with chopped parsley.
