The cole slaw was made first, yesterday at my nephew's 3rd birthday party. His grandmother had a food processor and I hijacked it. When I got sent home with the leftovers, (I'm a food poacher, what can I say) I added the rest of the ingredients and made this awesome salad out of it. Read more . I mean, this slaw was so jammin', I just had to share it with you.
Ingredients:
original cole slaw
1/2 head of cabbage
3 carrots, peeled and cut into 2 nuggets
oh gawd, how much did i use like, half the jar of mayonaise. i dunno, go by eye, i guess.
1 tbspn salt, pepper, sugar, garlic powder
later add-ons
1/2 small onion, julienned
5 chunks crabmeat (or immitation), chopped
2 dashes chili powder
1 additional tspn garlic powder
pinch of parlsey for color
juice from 1 lime wedge
sprigs of fresh dill for garnish
Directions:
1. In a Food Processor (So cool! I need to get me one of these!) shred cabbage and carrots.
2. Pour into a large mixing bowl. Add spices and mayonaise, little bits at a time until you aquire the desired consistancy.
3. Mix in the chopped onion, adding more spices if necessary to balance out the taste.
4. Serve on a plate with the cole slaw on the bottom and the chopped crab on top. Squeeze out the lime on top of it and garnish with fresh dill. Add a bit of dried parsley for color, if desired.
5. It looks and tastes gourmet, but it's really fun and easy to make. Trust me, you'll love it!
