Crab Salad on Croissant

Crab Salad with parmesan cheese and mayo. Great summertime sandwich!
Ingredients:
1 (8 ounce) package imitation crabmeat or 1 (8 ounce) package fresh crabmeat
1/4 cup sour cream
1/4 cup mayonnaise
1 tablespoon fresh lemon juice
1 green onion, chopped
1/2 cup celery, diced very fine
2 tablespoons pimientos or 2 tablespoons roasted red peppers, diced
3 tablespoons parmesan cheese
1/8 teaspoon pepper
Directions:
1. Chop crab into small pieces if necessary.
2. Combine all ingredients, mix well.
3. Chill for at least half an hour.
4. Serve on croissants with lettuce leaves.
