Ingredients:
1 lb lump crabmeat
1 english cucumber, peeled, seeded, and thinly sliced
1 large ripe mango, peeled and diced
1/4 cup chopped fresh mint
1 lime, juice and finely chopped zest thereof
3 tablespoons extra virgin olive oil
1 tablespoon fresh ginger, grated
1 red chili, stemmed, seeded, and finely chopped
sea salt
fresh ground black pepper
arugula or frisee
Directions:
1. In large bowl, combine crabmeat, cucumber, mango, and fresh mint.
2. In small bowl, whisk together lime juice, zest, olive oil, ginger, and red chili. Add to crabmeat mixture and season to taste with salt and pepper.
3. Put salad greens on plates and top with crab mixture.
