Crab Cakes With Mango Avocado Salsa

These are incredible. One of my neighbors made these for a block party we had last month. She made 80 of these and they were all devoured and she handed out the recipe at least a dozen times. Hope you enjoy as much as we do.
Ingredients:
2 eggs
1/2 pound fresh crabmeat
1 cup shredded pepper jack cheese
8 ounces cream cheese softened
2 jalapeno peppers chopped fine
3 tablespoons cilantro chopped fine
1 whole pimiento diced
3/4 cup seasoned bread crumbs
2 cloves minced garlic
salsa
1 can mango drained and diced
2 avocados small diced
2 jalapeno peppers finely diced
1 clove garlic mashed
1/2 small red onion small diced
juice of one lime
3 dashes tequila
1/4 cup cilantro chopped fine
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
Directions:
1. Whip eggs then add cream cheese, jalapenos and cilantro in food processor then move to bowl.
2. Add crabmeat, pimentos, cheese and bread crumbs then shape into 1/4 thick cakes.
3. Roll in more bread crumbs then fry in hot peanut oil until golden brown then drain well.
4. Mix together mango, avocados, jalapenos, garlic, onion, cilantro and lime juice.
5. Add tequila then toss gently and serve with crab cakes.
