Low cal - high protein crab cakes.
Ingredients:
1 1/2 pounds canned crabmeat
1/2 cup saltine crackers, crushed (12 crackers)
1/3 cup fresh parsley, chopped
1/2 cup red bell peppers, chopped (roasted in bottle)
1/3 cup celery, finely chopped
2 tablespoons plain low-fat yogurt
1 tablespoon water
1 tablespoon fresh lime juice
1/2 teaspoon hot sauce
1/2 teaspoon garlic (mrs. dash)
1/2 cup egg beaters
1 oil spray
Directions:
1. Combine all ingredients except oil spray in a large bowl. Divide crab mixture into 4 equal portions, shaping each into a 1-inch-thick patty. Heat a large nonstick skillet over medium-high heat. Add oil spray and 4 patties; cook 4 minutes. Carefully turn patties over with spatula; cook 3 minutes or until golden.
