CRAB AND CUCUMBER ROLLS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Adair Estate in Sulphur Springs, Texas in 1994.
Ingredients:
1 large cucumber
6-1/2 ounces crabmeat
4 tablespoons mayonnaise
1-1/2 teaspoons finely grated onion
1/8 teaspoon salt
1/2 teaspoon granulated sugar
5 dashes tabasco sauce
Directions:
1. Cut ends off cucumber and cut into 3 pieces.
2. Remove seeds with corer making a large cavity.
3. Mix crab, mayonnaise, onion, salt, sugar and Tabasco then stuff into cucumber.
4. Wrap cucumber in plastic wrap and chill then slice into 1/2 thick slices.
