I make these for every function I have or attend. I typically make 15lbs of wings and triple the marinade. I was thinking of maybe adding those small spicy red asian hot peppers to the next batch I make. HMMM let me know what you think,
Ingredients:
5-6 lbs. chicken wings (washed, cleaned, dried - tips can be cut off)
1 (8 oz) bottle pure honey - good quality
1-1/2 cup firmly packed dark brown sugar
1 cup soy sauce - good quality
one buch of scallions chopped
new variation would be the tiny thai red hot peppers whole added to marinade, ( thoughts )
Directions:
1. In very large bowl, put honey, brown sugar and soy sauce. Stir very well until mixture is very smooth and shiny and sugar is totally dissolved. Add all of the wings at once and mix until all pieces are fully coated. Cover tightly and refrigerate overnight. Turn wings over and around every couple of hours to re-coat and return to refrigerator. Place in large pan in single layer and bake 30-40 minutes on each side at 400 degrees. Watch and baste every 15 minutes with juice.
2. P.S. Cover wings with ALL the juice from the bowl before baking.
