Couscous With Mushrooms

This is a great side dish bursting with mushroom and nutty flavors. Hope you enjoy as much as I do.
Ingredients:
3 cups chicken stock
2 cups quick cooking couscous
3 green onions thinly sliced
4 tablespoons toasted pine nuts
1/2 cup thinly sliced mushrooms
minced parsley for garnish
Directions:
1. In a large saucepan over medium high heat bring stock to a boil.
2. Stir in couscous, onions, nuts and mushrooms.
3. Immediately remove from heat then cover and let stand 5 minutes.
4. Serve garnished with parsley.
