Couscous with Green Peas, Mint and Coriander (Robin Miller)

Ingredients:
1 cup couscous
1/2 cup frozen green peas
1 teaspoon ground coriander
2 tablespoons chopped fresh mint leaves
salt and ground black pepper
Directions:
1. Cook couscous according to package directions, adding peas and coriander when you add couscous to hot water. When ready to fluff with a fork, add mint and toss to combine. Season, to taste, with salt and black pepper.
