Ingredients:

Directions:

  1. Put the couscous in a large bowl. Pour over 1 1/4 cups boiling water (flavored with bouillon if you like for extra flavor). Cover with plastic wrap then set aside for 10 mins while you get the rest of the ingredients ready.
  2. Finely dice the tomatoes and cucumber, thinly slice the scallions and finely chop the parsley. Whisk the lemon juice, oil and garlic together with some salt and pepper.
  3. Fluff up the couscous with a fork, then stir through the other ingreadients and dressing. Season to taste and serve.
