Since currants are smaller than raisins, there are more of them in a cup—so with every bite, you get some of the sweetness. Ingredients:
1 1/4 cups fat-free, less-sodium chicken broth |
1 (5.8-ounce) package olive oil and garlic-flavored couscous |
1/3 cup diced carrot |
1/3 cup diced radishes |
1/3 cup currants |
1/3 cup chopped peanuts |
1/3 cup chopped fresh cilantro |
1/4 cup chopped green onions |
1/4 cup fat-free balsamic vinaigrette |
Directions:
1. Bring broth to a boil. Stir in couscous and flavoring packet. Remove from heat; cover and let stand 5 minutes. 2. Add carrot and remaining ingredients to couscous; toss well. Serve immediately or chill thoroughly. |
